There are times in life when the answer to every question is: chocolate! Just a quick Delicious Detour on this Friday morning to get you through Super Bowl Weekend. I know there’s going to be wings and things, chips and dips, beer and cheer, but if you’re looking to satisfy a need for chocolate, these “Cocoroons” are the thing.
And if you're so inclined to enjoy a little science with your sweet tooth, here's a great little article on Why Chocolate Is Good for You.
1 ½ Cup Shredded Unsweetened Coconut
½ Cup Maple Syrup (the good stuff….leave Aunt Jemima for the pancakes! Use no-sugar, no extra nothing….. in fact, go to Vermont and squeeze from a tree yourself!)
¾ Cup Cocoa Powder (again…higher quality…no added junk)
1-2 tsp Vanilla
¼ Cup Coconut Oil
¼ tsp Sea Salt
(I add Cocoa Nibs to the ones I make…..just an extra yum and crunch….you could also add almonds or dried cherries, or whatever floats your boat)
Mix all the ingredients.
Roll into small balls. I typically get more than a dozen, about a Tablespoon+ in size.
Freeze until set and then transfer to airtight container.
Store in freezer or refrigerator until serving.
These seriously satisfy a craving and because of the high-quality fat from the coconut oil, just one will usually do the trick.
